For children allergic to wheat, here is a receipe for wheat-free breakfast cereal, courtesy of the Allergy & Asthma Health Monitor:
3/4 cup oat flour 1 1/4 cups white rice flour 1 tbsp xanthan gum 1 tsp baking soda 1 tsp ground cinnamon 1/2 tsp baking powder 1 cup applesauce 3/4 cup sugar 3 tbsp water, 3 tbsp oil, 2 tsp baking powder, all mixed together 1/2 cup milk-free, soy-free margarine, melted 1/2 cup raisins *Preheat oven to 350 degrees and grease a 9-by-5 inch pan. Set aside *In large bowl, combine flours, xanthan gum, baking soda, cinnamon, and baking powder. Set aside. *In medium bowl, combine applesauce, sugar, water, oil, and baking powder mixture and margarine. Stir into flour mixture, mixing well. Stir in raisins. *Bake 40 to 45 minutes, or until toothpick inserted in center comes out clean. Cool in pan 20 minutes. Transfer to cool, flat surface to cool completely. Note: If you need not avoid wheat, this recipe may be made by substituting 2 cups flour for oat and rice flours, and omitting the xanthan gum. ![]() |
